I think your best bet is late June to mid July. However, the UK is not known for its fabulous weather, last summer we had pretty abysmal weather. I've just come down to the south of England the other day from Aberdeen and the weather was really really good albeit a little windy, where as in the south (ie supposed to be warmer) its been pouring down!

I've lived in Glasgow or Edinburgh for most of my life.

Whisky you say? My friend has an extremely large collection with some really rare stuff, anecdotally he also had a hand in the movie "Highlander" The sword is on his wall.

If you're going to be passing Glasgow then give me a shout and I'll point you in the right directions.

Wait for the line "And tonights special is haggis, but we do it a bit different here, it's pan fried with a breaded crust, served with a cranberry sauce. (I've heard that line from the special for 6 years running

I can't give you any highland hotel recommendations as I have not stayed in any of them
I always check out http://www.tripadvisor.com/ though, seems like a fairly good way of checking things out from a customers perspective
