What´s the difference between Damage and Damage per second (Dmg/sec)? Does it have any significance when choosing a weapon?

the damage is how much damage you will do per shot (the damage is stated on the gun)

and the average damage/second is how much damage you do per second and is worked out by

min dmg + max dmg/two *the attacks per minute /60

damage is the max damage the weapon does and damage/sec well is the damage a weapon does each sec

for hunting the the stat you will be needing is damage/sec

a weapon with high damage like a tango and then 12 sec reload is useless in hunting because the low damage/sec

you hit a mob for 200+ damage and it hits you for 12 sec until you can fire again for instance

Damage on it own doesn't mean much unless it high enough to do a one hit kill.
Damage per second is very important; it can be difference between killing something before it kills you or whether you can hunt without armor.

All weapons have a max damage & attack per minute rate (different reload times between hits). For me damage per second is a lot more important when hunting mob that are at my limited; it means less fapping & more looting per hour.

Wow, and there i was thinking you were someone's alt. Your reselling efforts on armor bps are rather crude.

Besides what has been said already, the high damage, low fire rate weapons have the additional disadvantage that you tend to waste more on overkill, so unless you are looking for a PK weapon you will want to find the lowest damage and highest dmg/s.
